Poultry:

Herb Roasted Whole Chicken: The quintessential roast chicken with fresh herbs and pan gravy

Chicken Stew with Herbed Biscuits: Large chunks of chicken with peas, carrots and pearl onions in a rich gravy, topped with homemade biscuits laced with fresh herbs

Chicken Cacciatore: Chicken with peppers, onions and mushrooms in a delicious tomato sauce

Apple Cider Chicken: Chicken simmered in cider and vinegar.  This is a delicious slightly sweet and tangy dish.  Served with buttered noodles.

Chicken in Creamy Mushroom Sauce:  Large chunks of chicken and wild mushrooms in an herbed cream sauce

White Chicken Chili:   Chunks of chicken, green chilis, and white beans make this a satisfying one pot dinner.

Chicken Breasts Stuffed with Herbed Goat Cheese and Apricots:   Chicken pinwheels stuffed with sweet and savory ingredients

Turkey Tamale Potpie: Ground turkey breast, beans and tomatoes, seasoned Southwest style and topped with a delicious cornbread topping. 

Roasted Turkey Breast seasoned and roasted until golden and delicious

Ginger-Cranberry Glazed Turkey Breast: Delicious spicy glazed turkey breast


Pork:

Herb Crusted Pork Roast:  Moist pork crusted with aromatic herbs and roasted to perfection!

Blueberry-Onion Sauced Pork Tenderloin:  Pork medallions served with a compote of slow cooked onions and blueberries.  Summer blueberries served a savory way!

Pork Chops with Cornbread stuffing:  Thick pork loin chops seared and then baked with delicious homemade cornbread stuffing.  A hearty family favorite.

Jerk Pork Tenderloin with Pineapple Chutney:   A taste of the Caribbean!  Spicy jerk seasoned pork with a classic sweet and sour chutney. 


Beef:

Barbecued Beef:  Slow cooked beef with a homemade barbecue sauce, shredded to pile high on crusty rolls, or topped with cornbread and baked.

Korean Grilled Beef:  Sirloin steak marinated in a garlic and ginger.  Broiled and sliced or left ready for you to grill.

Texas Oven Roasted Beef Brisket:  Slow cooked with root vegetables until it is fork tender

Old fashioned Pot Roast of Beef:  This is slow roasted, with carrots, sweet potatoes, white potatoes and onions and delicious gravy.

Pot Roast Provencal:  Slow roasted beef with red wine, Provencal herbs and root vegetables

Updated Old Fashioned Meatloaf:  Made with 90% lean beef, and laced with carrots, onions and celery for loads of flavor.  This is very moist and flavorful.

Barbecue MeatloafMy meatloaf with barbecue seasoning and sauce for a delicious twist.

Beef Burgundy: Lean chunks of beef simmered in red wine, with mushrooms and pearl onions

Old Fashioned Beef Stew:  Large chunks of beef, mushrooms, pearl onions, potatoes and baby peas simmered in a hearty beef broth.

Broiled Herbed Flank Steak:    Herb rubbed steak, broiled and sliced thinly


Soups

Italian “Soup Stew”:  An award winning recipe using turkey Italian sausage (hot or mild), zucchini, summer squash, green beans and mushrooms in a tomato sauce.  This is a delicious one pot meal.

Pasta Fagioli:  Pasta and white beans in a savory tomato base.

Minestrone:  Red beans, vegetables, and bites of pasta in a rich broth

Potato, Corn and Leek Chowder:  Fresh corn cut from the cob stars in this hearty chowder.

Corn and Chicken Chowder:  Chunks of chicken breast and corn in a thick, rich chowder

Clam Chowder:  Clams and potatoes in a light cream broth with a hint of smokey bacon

Taco Stew:  Familiar taco seasoned beef in a stew with zucchini, yellow squash, and pinto beans in a tomato base.

Mama’s Chicken Soup: Good old fashioned chicken soup with chunks of chicken and vegetables in a rich chicken broth.  With noodles of course!

Chicken and Dumplings:  Rich chicken broth with chunks of chicken and homemade dumplings

Beef Barley:  Lean beef in broth with pearl barley, carrots, peas and onion

Beef Vegetable:  Lean beef in broth with mixed vegetables


Main Dish Salads: (fresh service, cannot be frozen)

Raspberry Curry Chicken Salad:  Pasta ruffles, chunks of chicken, celery and dried cranberries dressed lightly with mayonnaise, raspberry syrup and a touch of curry.  Light and delicious!

Greek Chicken Salad:  Bowtie pasta with chicken, tomatoes and feta cheese.  Dressed in a Greek style dressing with oregano and basil

Italian Shrimp Salad:   Bowtie pasta with large shrimp, cucumber, cherry tomatoes, Romano cheese and Italian vinaigrette

Coconut Crab and Shrimp Salad:   Shrimp and crab combined with avocado, corn, onion, some spicy jalapeno, and a hint of coconut.  Delicious!


Italian - American Specialties:

Five Cheese Lasagna:  With a homemade meat sauce or marinara sauce.

Manicotti:  Homemade crepes filled with ricotta and baked with homemade marinara sauce

Spaghetti and Meatballs:   Slow cooked sauce and meatballs made with beef and pork

Baked Penne Regate with Sausage and Peppers:  Pasta with sausage, peppers in a homemade marinara sauce

Penne or Linguini with Vodka Sauce:  A twist on your favorite tomato sauce. 


Seafood:

Basil Shrimp: Jumbo shrimp pan seared with basil, butter and lemon.  Fresh, clean and delicious!

Pasta with Shrimp Sauce: Shrimp simmered in a spicy tomato and garlic sauce with black olives.

Shrimp Scampi: Shrimp in garlic butter to serve over rice or pasta.  A classic!

Sage Stuffed Prawns Wrapped in Pancetta:  Giant shrimp with fresh sage and wrapped in pancetta, pan seared to juicy perfection!

Venetian Scallops:  Scallops in a delicious garlic tomato sauce served over linguine.

Citrus Glazed Scallops: Scallops glazed with orange, lemon and lime with an Avocado salsa.  Delicious, fresh flavors.

Tilapia with Artichokes and Sun Dried Tomatoes:  Pan sautéed tilapia filets in a light cream sauce with artichoke hearts and sun dried tomatoes.

Tilapia with Chili Lime Butter: Crispy pan sautéed tilapia with a delicious chef prepared chili lime butter. 

Salmon with Grapefruit Shallot Sauce: Salmon roasted or grilled in a light citrus sauce.

Bronzed Salmon in a Basil Wine Cream Sauce:  Pan seared salmon steaks in a white wine cream sauce with fresh basil.  This is delicious!


Vegetarian:

Black Bean and Goat Cheese Enchiladas: Enchiladas stuffed with black beans and a touch of goat cheese then smothered in enchilada sauce and Monterey Jack cheese.

Portobellos Stuffed with Tri-colored Orzo and Gorgonzola:  Broiled Portobello mushroom caps stuffed with a flavorful orzo and Gorgonzola cheese mixture.

White Bean and Roasted Mushroom Ragout: Flavorful and satisfying.

Lentil & Bulgur Pilaf with Green & Yellow Squash: Lentils and bulgur simmered in a flavorful broth with yellow and green summer squash. 

Quinoa Stuffed Acorn Squash:  Quinoa, dried fruit, and pecans served in acorn squash halves. 

Leek and Potato Cakes with Gruyere:  Delicious cakes of mashed potato and gruyere in a rich leek sauce.  

Tofu in Spicy Red Coconut Sauce: Pan seared tofu in a spicy sauce of red curry, ginger and light coconut milk.  

Spanikopita:  Crispy layers of phyllo filled with spinach, feta cheese and a hint of dill.
